Never sell expired stock

Every batch is tracked with its expiry date and value. The dashboard tells you what is at risk, in which store, and what it is worth, long before anything has to be thrown away.
FEFO means first expired, first out. When staff pick an order, the system always hands them the batch that expires first. They don’t have to think about it.
